چکیده
Implication for health policy/practice/research/medical education: Originally different kefir grains may contain various microbial complexes. The beneficial effects of probiotic microorganisms vary from strain to strain and condition to condition. Knowing their microbial characterizations is needed for the safety confirmation. Metabolic activity and symbiotic interactions of lactic acid bacteria and yeasts isolated from water kefir.
Water kefir is a mildly sour and alcoholic drink fermented by a stable microbial multispecies community. With its high sugar content and low amino acid concentration water kefir medium represents a demanding habitat. In this ecological niche only well adapted microorganisms which are fit to the consortium are able to grow and mutually provide essential nutrients. The synergism between main repr...
متن کاملReduction of Aflatoxin M1 in Milk Using Kefir Starter
Background: Mycotoxins naturally occur in foods. Aflatoxins can cause serious health problems in consumers. Nowadays, biological detoxification method is considered to decrease the aflatoxins level in foods. The aim of this study was to evaluate the effect of kefir starter microorganisms to decrease the aflatoxin M1 (AFM1) levels in milk. Methods: The study was carried out at Shabestar branch,...
متن کاملProperties and benefits of kefir -A review
Kefir is becoming increasingly popular as a result of new research into its health benefits. It is a fermented milk drink which has its origin in the Caucasus Mountains of Russia. Kefir is prepared by inoculating milk with kefir grains which are a combination of bacteria and yeasts in a symbiotic matrix. The common microorganisms present are non-pathogenic bacteria, especially Lactobacillus sp....

Nippon Eiyo Shokuryo Gakkaishi (J. Jpn. Soc.Nutr. Food Sci.) 47, 55~59 (1994) Lactic acid bacteria (3 strains of cocci and 10 strains of bacilli) and lactose-fermenting yeasts (18 strains) were isolated from a 24 h cultured of kefir milk. The lactococci and yeasts were identified as Streptococcus lactis and Kluyveromyees marxianus var. marxianus, respectively. The lactobacilli were of the heter...
متن کاملMicrobiological and chemical properties of kefir manufactured by entrapped microorganisms isolated from kefir grains.
In this study, various yeasts (Kluyveromyces marxianus, Saccharomyces turicensis, Pichia fermentans) and lactic acid bacteria (Lactobacillus kefiranofaciens, Lactobacillus kefiri, Leuconostoc mesenteroides) were entrapped in 2 different microspheres using an entrapment ratio for the strains that was based on the distribution ratio of these organisms in kefir grains. The purpose of this study wa...
